Southern Easy Recipe Potato Casserole

New Potato Casserole

While digging up purple potatoes in my garden I came up with this New Potato Casserole. 

Ingredients
  • Ingredients
  • 8-10 assorted new potatoes, thinly sliced
    Onions, sliced
    Fresh spinach
    Soy margarine or butter
    Cheese
    2 cans condensed cream soup (your choice), diluted with 1 cup milk
    Bread crumbs
Directions
Alternate layers of potatoes, onions & fresh spinach.
Dotting each layer with margarine or butter, cheese and bread crumbs.
Pour soup over potatoes, top with cheese and bread crumbs.
For vegans substitute with soy cheese and soy milk.
