Shoofly Pie



Shoofly Pie and Apple Pan downy, make your eyes pop out, we never say howdy, Shoofly Pie and Apple Pan Downy, I never get enough of that wonder stuff. Pantry pie, go to the pantry and you want a pie. There’s the baking soda, there’s of course at that time there was butter or margarine, there’s the sugar and molasses. That's your pie.  It’s an amazing once you but those things together what comes out of that.  People will say to me what is it. I say it's a pantry pie. The poorest of the poor can have a pie like this, you know what I mean.  And if you want to take it a little further than the basic stuff, you can add a few pecans or peanuts, you know take it up have a different flavor. That molasses, now when we did it with molasses we had the pure molasses. There was no light molasses, no unsulfered molasses; it was just the regular molasses. If you can find that and you can take that really strong yummy flavor, that’s what you should use for your Shoofly Pie. If not, still use whatever you have on hand; it's still going to taste good you just have to put your love into it.
Shoofly Pie
                    Ingredients


¾ cup all purpose flour
½ cup packed brown sugar
3 Tablespoons margarine or butter
½ teaspoon salt
½ teaspoon ground cinnamon
¼ teaspoon ground ginger
1/8-teaspoon ground nutmeg
¾ cup hot water
½ teaspoon baking soda
½ cup dark molasses
1 egg yolk, well beaten
1 piecrust (store bought already made or your favorite piecrust recipe)

(Makes 8 servings)



                        Directions


Heat oven to 400?.  Prepare pastry in a pie plate.
Mix flour, brown sugar, margarine, salt, cinnamon, ginger and nutmeg with hands until crumbly.
Mix water and baking soda in 1 quart bowl.
Stir in molasses and egg yolk.
Pour into piecrust.
Sprinkle crumbly mixture over molasses mixture.
Bake 15 minutes.  Reduce oven temperature to 325?.  Bake until crust and crumbs are brown (about 20 minutes).  Serve warm.
