| Spicy Potato Patties |

Ingredients
1 small onion, finely chopped
1 teaspoon of ground cumin ½ teaspoon chili powder 2 green chilies, finely chopped 3 Tablespoons freshly chopped cilantro 1 egg Salt and pepper 2 Tablespoons oil |
Directions
Cook the potatoes in boiling salted water until they are tender. Meanwhile, mix the lemon juice, mint and a pinch of salt with the onion in a bowl. Set aside Drain potatoes, mash them lightly so mixture is still slightly lumpy. Add cumin, chili powder, green chilies, cilantro and salt. Mix well. Divide the potato mixture into eight equal portions. Dampen your hands a little with water and roll each portion in turn between your palms to make a ball. Make a dent in the ball, fill it with a tiny amount of the mint and onion filling. Cover the filling and flatten each ball gently to form a burger shape. Just before frying the patties, whisk the egg and season lightly. Heat a large non stick skillet and grease it with half the oil. When pan is fairly hot, dip a potato patty into the egg and put in pan. Add more patties. Let them sizzle for a minute or so turn over and cook the other side until they are crisp and golden brown. |
