Bean Chili
1 large onion, chopped 2 cans (14-1/2 oz. each) chicken broth 2 garlic cloves, minced 3 tablespoons chili powder 1-1/2 teaspoons g round cumin 1/2 teaspoon dried oregano 1 lb carrots, sliced 1 lb red potatoes, cubed 2 cans (14-1/2 oz each) diced tomatoes, undrained or 3 cups diced fresh tomatoes 1 can (15 oz) black beans, rinsed and drained 1 can (16 oz) kidney beans, rinsed and drained 1 can (15 oz) garbanzo beans, rinsed and drained 2-1/2 cups water |
Directions
Bean Chili In a Dutch oven, simmer onion in broth for 5 minutes. Add garlic, chili powder, cumin, oregano, carrots, and potatoes: bring to a boil. Reduce heat. Cover; simmer 10 minutes. Add remaining ingredients. Cover; simmer 20 minutes. |
